For those who are not familiar with dehydrators: Dehydrators help removing water from the food, therefore protect it from mold and bacteria. If the correct temperature is set while drying fruits and vegetables in a dehydrator (usually less than 140F) the enzymes will not be inactivated, keeping the food “alive”. There are other ways to dry fruits and vegetables, such as sun drying and oven drying. However, dehydrator is a much quicker and energy efficient way to go about it.
